Cilantro Tilapia with Tropical Rice

Today I wanted to share one of my favorite meals to make.  Inspired by the fresh fish and tropical rice we had on our honeymoon in Hawaii, it is very good and also easy to make!


For two people, here is what I use:

  • 1/2 cup long-grain rice 
  • 1 cup chicken broth
  • 1/4 cup orange juice
  • 1/4 lime juice
  • 2 tablespoons olive oil
  • 1/4 cup chopped cilantro
  • 2 minced garlic cloves
  • 1 teaspoon sugar
  • 2 tilapia fillets
  • 1 cup diced tomatoes
  • 1/2 can black beans
  • 1/2 cup crushed pineapple
Directions:
  1. Combine rice and chicken broth over medium heat and bring to boil.  Reduce heat to low, cover, and cook until rice is tender and liquid is gone (about 20 minutes)
  2. Preheat oven to 400 degrees (or you can put it in the grill about medium heat if you don't want to use the oven in the summer time)
  3. Salt and pepper tilapia
  4. Whisk together orange juice, lime juice, oil, 2 tablespoons of cilantro, garlic, and sugar
  5. Add tilapia to marinade and refrigerate for 20 minutes or more
  6. Stir together rice, tomatoes, beans, pineapple, and most of remaining cilantro into a baking dish 
  7. Place tilapia on top of the rice mixture and pour the marinade over the fish and rice and garnish the fish with the rest of the cilantro

     8. Bake fish until it flakes easily and is opaque, about 25 to 30 minutes
     9. Sprinkle lime juice on the fish and it's ready to eat!!
