Chocolate Chip Granola Bars

Every Sunday Gary and I make granola bars to eat in the mornings for the upcoming week.  This week we decided to mix it up and make chocolate chip granola bars.  The recipe is really easy and takes about 45 minutes (30 of it is in the oven).  

1.  Preheat oven to 350 degrees.

2. Toss 2 cups of oats and 1 cup of shredded coconut in the pan you are going to bake your granola in.


3. Toast the oats and coconut for about 10 minutes.

4. While the oats and coconut are toasting, pour 2/3 cup of honey, 3 tbs unsalted butter, 1/4 cup brown sugar, 1 1/2 tsp. of vanilla extract, and 1/4 tsp. of kosher salt in a microwave safe bowl and microwave for 2 minutes.


5. Turn down heat to 300 degrees.  Pour the oats and coconut into the bowl and toss until covered in the melted honey mix.

6. If you want to add chocolate chips, you have to wait for it to cool down before you mix in the chocolate chips, or else you will have chocolate granola bars (which is good too).  Once the mix has cooled, mix in however many chocolate chips you want.


7. Butter the pan that you are baking your granola in, then add the granola mix.


8. Bake the granola for 25-30 min at 300 degrees.
